Ingredients
1 package PERDUE® Baked Breaded Chicken Breast Tenderloins 1/8 cup tomato paste 3 tablespoons red wine vinegar 1/4 teaspoon pepper 1/2 cup olive oil 12 large lettuce leaves 2 cups steamed fresh or frozen green beans 2 slices provolone cheese, cut into thin strips
Preparation Steps
- Preheat oven to 400°F. Place tenders on baking sheet and bake for 9-11 minutes. While tenders are heating, mix together tomato paste, vinegar and pepper. Slowly add oil while mixing.
- Break lettuce leaves into small pieces. When tenders are heated, toss lettuce with 1/2 cup of dressing. Divide lettuce among four dinner plates.
- Place 1/2 cup of beans over lettuce. Top with cheese and then add tenders. Drizzle remaining dressing over tenders.
