Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breast Tenderloins 12 tomatillos, with husks removed Water 1 can (4 ounces) chopped mild green chiles, drained 1/4 cup minced cilantro 1 jalapeno pepper, minced Salt and ground pepper to taste 1 teaspoon chili powder 1 teaspoon ground cumin 2 teaspoons vegetable oil 1 cup shredded iceberg lettuce 1/3 cup reduced fat sour cream 4 flour tortillas (8 inch size)
Instructions
- In small saucepan over medium high heat, combine tomatillos and water to cover; bring to a boil. Reduce heat to medium; cook 5 to 10 minutes until tomatillos are just tender. Drain tomatillos; cool and dice.
- In medium bowl, combine diced tomatillos, chilies, cilantro, jalapeno, garlic and salt and pepper; set aside.
- Sprinkle tenderloins on both sides with salt and pepper, chili powder and cumin. In large nonstick skillet over medium high heat, heat oil; add seasoned tenderloins and sauté 1 minute on each side. Reduce heat to medium low; cook 4 to 7 minutes longer until cooked through, turning 2 to 3 times.
- To serve, combine tenderloins, tomatillo mixture, lettuce and sour cream in tortillas and roll up.
