Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breast Tenderloins 2 large eggs Salt and ground pepper to taste 1 1/2 cups instant mashed potato flakes 1/4 cup canola oil Ketchup or salsa
Instructions
- In wide, shallow bowl, beat eggs with salt and pepper to taste. Place potato flakes on a platter. Dip tenderloins in egg mixture, then potato flakes.
- In large, nonstick skillet over medium high heat, heat oil.
- Add tenderloins and fry 2 to 3 minutes per side, until cooked through, golden and crispy. Do not crowd pan, if necessary, cook in two batches.
- Serve with ketchup or salsa.
