Ingredients

2 PERDUE® Fresh Whole Cornish Hens
6 tablespoons canola oil
4 tablespoons plain yogurt
1/2 teaspoon ground red pepper
3 cloves garlic, crushed
1/2 teaspoon ground cloves
1 teaspoon ground black pepper
1/2 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon paprika
1 1/2 teaspoons salt

 

Instructions
  1. Split hens in half lengthwise. Place hens in shallow baking dish.
  2. In small bowl, combine oil, yogurt and remaining ingredients. Pour half of yogurt mixture over hens, turning to coat well. Cover and refrigerate 1 hour or longer. Set aside remaining yogurt mixture.
  3. Prepare covered grill for cooking. Remove hens from marinade; grill, covered, 5 to 6 inches over medium-hot coals for 15 to 25 minutes or until juices run clear when thigh is pierced, turning and brushing with reserved yogurt mixture 4 to 5 times during grilling.
