Ingredients
1 package PERDUE® Whole Turkey 10-14 lbs. 2 tablespoons olive oil 3 cloves garlic, minced,(divided) 1 tablespoon plus 1 teaspoon ground ginger (divided) 1 tablespoon sugar 1 tablespoon salt 2 1/4 teaspoons crushed red hot pepper flakes 2 teaspoons ground cumin 2 teaspoons ground allspice 1 cup white vinegar 1/4 cup brown sugar 3 cans (10 ounce) mixed tropical fruit salad, drained 1 lightly packed lime 1 Cinnamon stick 2 whole cloves
Instructions
- Preheat oven 350° F.
- Combine oil, (2 tspn) garlic, (1 tbspn) ginger, sugar, salt, (2 tspn) pepper flakes, cumin and allspice in small bowl. Rub all over the inside and outside of the turkey and place in roasting pan.
- Roast turkey 20 minutes per pound or until meat thermometer inserted into thickest part of thigh registers 180° F.
- While turkey is roasting, combine vinegar and sugar in medium saucepan and cook over medium heat until sugar dissolves. Remove from heat and add fruit, lime juice, cinnamon stick, cloves, (1 tspn) garlic, (1 tspn) ginger and (1/4 tspn) pepper flakes. Mix well. Cover and set aside until turkey is ready.
- Remove cloves and cinnamon stick from the fruit salsa and serve with sliced turkey.
