Taco-Style Cornish Hens Served with Guacamole, Chopped Tomatoes & Tortillas Rate/Review This Recipe |

Ingredients
2 PERDUE® Fresh Whole Cornish Hens 1 package taco seasoning or chicken taco seasoning (1-ounce) 2 avocados Juice of 1 lime 3 medium-sized, ripe tomatoes 4 tortillas
Instructions
- Preheat broiler. Remove giblets from all hens. Split hens in half lengthwise. Place hens on a foil-lined baking sheet and rub with taco seasoning.
- Broil, turning every 5-7 minutes, for 25-30 minutes, or until until hens’ juices run clear when thigh is pierced with a fork and a thermometer inserted in the thickest part of the thigh reads 180°F.
- Meanwhile, peel and pit avocados and mash with a fork, adding lime juice. Set aside. Dice tomatoes. Set aside.
- Remove hens from broiler and let rest 10-15 minutes before serving. During this time, spray tortillas lightly with water, wrap in foil and bake at 400°F. until warm and soft, about 10 minutes. To serve, divide hen halves among plates and serve alongside a scoop of guacamole, a scoop of tomatoes and a folded tortilla.
