Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breast Tenderloins
3 1/2 teaspoons cornstarch, divided
1 tablespoon peanut oil
1 red bell pepper, thinly sliced and seeded
1/4 pound shiitake mushrooms, sliced
1 can (9 ounces) thinly sliced bamboo shoots, drained
1 can (9 ounces) sliced water chestnuts, drained
1/4 pound sugar snap or snow peas
1 cup reduced sodium chicken broth
2 tablespoons water
1 tablespoon reduced sodium soy sauce
1 teaspoon sugar
1/4 teaspoon sesame oil
Salt and ground pepper to taste
2 cups hot, cooked brown rice

 

Instructions
  1. In medium bowl, toss tenders with teaspoon cornstarch.
  2. In wok or large, heavy nonstick skillet over medium high heat, heat oil. Add chicken, bell pepper slices; stir-fry 3 minutes. Add mushrooms, bamboo shoots, water chestnuts and peas; stir-fry 2 minutes longer. Add chicken broth.
  3. In cup, dissolve remaining 2 1/2 teaspoons cornstarch in water; stir in soy sauce, sugar, and sesame oil. Add cornstarch mixture to skillet; cook until sauce is thickened, stirring constantly. Season with salt and pepper. Serve with brown rice.
