Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breast Tenderloins 3 1/2 teaspoons cornstarch, divided 1 tablespoon peanut oil 1 red bell pepper, thinly sliced and seeded 1/4 pound shiitake mushrooms, sliced 1 can (9 ounces) thinly sliced bamboo shoots, drained 1 can (9 ounces) sliced water chestnuts, drained 1/4 pound sugar snap or snow peas 1 cup reduced sodium chicken broth 2 tablespoons water 1 tablespoon reduced sodium soy sauce 1 teaspoon sugar 1/4 teaspoon sesame oil Salt and ground pepper to taste 2 cups hot, cooked brown rice
Instructions
- In medium bowl, toss tenders with teaspoon cornstarch.
- In wok or large, heavy nonstick skillet over medium high heat, heat oil. Add chicken, bell pepper slices; stir-fry 3 minutes. Add mushrooms, bamboo shoots, water chestnuts and peas; stir-fry 2 minutes longer. Add chicken broth.
- In cup, dissolve remaining 2 1/2 teaspoons cornstarch in water; stir in soy sauce, sugar, and sesame oil. Add cornstarch mixture to skillet; cook until sauce is thickened, stirring constantly. Season with salt and pepper. Serve with brown rice.
