Savory Chicken Ribbons with Grilled Vegetables Rate/Review This Recipe |

Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced 1 medium onion, cut into wedges 1 small head bok choy (about 13 ounces), cut into 2-inch pieces 1 package (10 ounces) mushrooms, quartered 1 cup bottled oriental stir-fry sauce, divided 4 kabob skewers*
Instructions
- Preheat grill or broiler. Cut chicken cutlets lengthwise into 1-inch wide strips. Loosely thread chicken onto skewers folding back and forth to look like ribbons and then place skewers on baking sheet.
- In large bowl, combine onion, bok choy, mushrooms and 1/2 cup stir-fry sauce and toss until evenly coated.
- Brush chicken with remaining 1/2 cup stir-fry sauce and grill or broil, turning occasionally, 6 minutes or until cooked through.
- Grill vegetables in grill wok or on grill screen, stirring occasionally, until tender.
- Serve chicken ribbons with grilled vegetables.
*Note: If using bamboo skewers, soak in hot water 30 minutes before using.
