Ingredients
1 package PERDUE® Lean Turkey Sausage Links, Sweet Italian 8 ounces penne pasta 4 large (about 5 ounces each) portabella mushrooms, stems removed and cut into thick slices 2 tablespoons olive oil 1 jar (7 ounces) roasted red peppers, drained and coarsely chopped 3 tablespoons balsamic vinegar Salt and ground pepper to taste 2 cups your favorite red pasta sauce, heated
Instructions
- Preheat grill or broiler. Cook pasta according to package directions.
- Meanwhile, in medium bowl, combine mushrooms and oil and toss until evenly coated.
- Grill or broil sausage, turning occasionally, 15 minutes or until meat thermometer inserted in center registers 165°F; remove and cut each in half.
- Grill mushrooms in grill wok or on grill screen, stirring occasionally, until tender.
- In large bowl, combine cooked sausage, mushrooms, roasted red peppers, vinegar, salt and ground pepper and toss until evenly coated.
- In serving bowl, toss together hot pasta and sauce then top with sausage mixture.
