Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced 1 tablespoon olive oil 2 cloves garlic, minced 1/2 cup dry white wine* 1/2 cup chicken broth 1 jar (6 ounces) marinated artichoke hearts, quartered 1 can (15 ounces) cannelloni or other white beans, drained and rinsed 1/2 teaspoon minced fresh rosemary, or 1/8 teaspoon dried fresh thyme leaves
Instructions
- Heat oil in a large skillet over medium heat. Add chicken; stir and cook for 8-10 minutes.
- Remove chicken from pan. Add garlic; stir and cook until golden brown. Pour wine and broth into pan and bring to a boil, stirring at first to loosen any brown particles from the pan. Boil until reduced by half, about 5 minutes. Add artichoke hearts and beans and cook until heated throughout.
- Return chicken to pan along with rosemary and thyme; cover and cook for another 3-4 minutes until chicken is cooked.
- Place on platter or plates and serve.
* May substitute 1/2 cup chicken broth or water.
