Ingredients
1 PERDUE® OVEN STUFFER® Whole Roaster 2 tablespoons butter (alternate: margarine) 3 stalks celery, chopped 1/2 teaspoon salt Ground pepper to taste 4 scallions, thinly sliced 1/2 cup chopped fresh parsley 1/3 cup chopped fresh basil 3 tablespoons pignoli nuts (pine nuts) 4 cups cooked rice
Instructions
- Preheat oven to 350°F. Remove giblets.
- In a large skillet over medium-low heat, heat butter or margarine. Add celery and sauté for 5 minutes. Add remaining ingredients and mix well.
- Stuff roaster with 3 cups rice mixture. Place roaster, breast side up, in a shallow roasting pan in oven. Roast 2 to 2 1/2 hours or until PERFECT ROAST® Thermometer pops up and a thermometer inserted in thickest part of thigh registers 180°F.
- Remove and discard PERFECT ROAST® Thermometer before carving.
- Serve roaster with remaining rice mixture.
