Ingredients
2 packages PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced 2 teaspoons olive oil 3/4 cup frozen corn kernels, thawed 1/2 cup diced roasted red bell pepper 1/4 cup bottled balsamic vinaigrette 1/4 cup diced tomato, no seeds 2 tablespoons fresh chopped basil or 1 teaspoon dried
Instructions
- Heat oil in a large skillet over medium heat.
- Add chicken; stir and cook for 8-10 minutes. Remove chicken from pan and add corn and bell pepper. Stir and cook until corn starts to brown slightly. Add vinaigrette and bring to a boil.
- Boil 2-3 minutes; add tomatoes and basil and stir until well combined. Return chicken to pan to heat.
- Serve with fettuccine and green beans, if desired.
