Ingredients
1 PERDUE® OVEN STUFFER® Whole Roaster 4 red onions, cut into wedges 1 cup balsamic vinaigrette 1/2 cup chicken broth 2 tablespoons fresh Italian parsley, chopped
Instructions
- Preheat oven to 350°F. Set chicken in a roasting dish and arrange onions around it. Pour vinaigrette and broth over chicken and onions.
- Roast until PERFECT ROAST® Thermometer pops up and when meat thermometer inserted into the thickest part of thigh registers 180°F(approximately 2 hours).
- Let chicken rest 10 minutes before carving and serving with onions.
