Ingredients

1 PERDUE® OVEN STUFFER® Whole Roaster
4 red onions, cut into wedges
1 cup balsamic vinaigrette
1/2 cup chicken broth
2 tablespoons fresh Italian parsley, chopped

 

Instructions
  1. Preheat oven to 350°F. Set chicken in a roasting dish and arrange onions around it. Pour vinaigrette and broth over chicken and onions.
  2. Roast until PERFECT ROAST® Thermometer pops up and when meat thermometer inserted into the thickest part of thigh registers 180°F(approximately 2 hours).
  3. Let chicken rest 10 minutes before carving and serving with onions.

The recipe was extremely easy. It was my first time making an oven stuffer. My husband loves it. Now I am making this at least twice a month.
