Ranch-Style Cornish Hens Served with Potato Wedges & Corn Rate/Review This Recipe |

Ingredients
4 PERDUE® Fresh Whole Cornish Hens 1/3 cup low-fat ranch dressing, plus more for dipping 4 medium-sized baking potatoes, rinsed and scrubbed 2 teaspoons vegetable oil 1 teaspoon salt 1 can corn (15 ounces) (alternate: 2 cups frozen corn)
Instructions
- Preheat oven to 400° F. Baste Cornish hens with ranch dressing and place in a large roasting pan, leaving room around each one.
- Slice each potato into quarters, and then slice each quarter lengthwise into 6 strips, like big French fries. Toss potatoes with oil and salt and surround hens with them in roasting pan, leaving hens’ top halves bare.
- Roast for 50-55 minutes, or until juices run clear when thigh is pierced with a fork and a thermometer inserted in the thickest part of the thigh reads 180° F.
- Meanwhile, prepare corn according to can or package directions. Let hens rest 10 minutes before serving.
- To serve, cut meat from hens for small children. Scoop some potato wedges and corn onto each plate, and top with a hen. Serve with more ranch dressing for potato-dipping.
