Ranch-Style Cornish Hens Served with Potato Wedges & Corn     Rate/Review This Recipe

Ingredients

4 PERDUE® Fresh Whole Cornish Hens
1/3 cup low-fat ranch dressing, plus more for dipping
4 medium-sized baking potatoes, rinsed and scrubbed
2 teaspoons vegetable oil
1 teaspoon salt
1 can corn (15 ounces) (alternate: 2 cups frozen corn)

 

Instructions
  1. Preheat oven to 400° F. Baste Cornish hens with ranch dressing and place in a large roasting pan, leaving room around each one.
  2. Slice each potato into quarters, and then slice each quarter lengthwise into 6 strips, like big French fries. Toss potatoes with oil and salt and surround hens with them in roasting pan, leaving hens’ top halves bare.
  3. Roast for 50-55 minutes, or until juices run clear when thigh is pierced with a fork and a thermometer inserted in the thickest part of the thigh reads 180° F.
  4. Meanwhile, prepare corn according to can or package directions. Let hens rest 10 minutes before serving.
  5. To serve, cut meat from hens for small children. Scoop some potato wedges and corn onto each plate, and top with a hen. Serve with more ranch dressing for potato-dipping.
