Quick Perfect Portions Chicken Soup

Ingredients

2 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts, Herb & Pepper
1 container 32 oz low fat, low salt chicken broth
1 small onion diced
baby carrots (to taste)
1 or 2 ribs of celery sliced (depending on how much you like)
1 or 2 fresh bay leaves (depending on size)
4 - 5 fresh sage leaves
3 stems of fresh thyme
salt & pepper to taste (but it really doesn't need it)
Barilla Plus Spaghetti

 

Instructions

Slice baby carrots into approximately 1/2" slice, slice celery and dice onion. Steam these vegetables in the microwave with a little of the broth until just done - about 2 -3 minutes depending on the wattage of your microwave. Bring broth, vegetables, and herbs to a simmer in a large saucepan. Add Perfect Portions chicken breasts and simmer about 5 min. remove chicken and cut into 1/2 to 1" cubes. Whichever you prefer. Return the cut up chicken to the pot and simmer on very low about 10 min.(or less), as you don't want to overcook the chicken. Meanwhile, break spaghetti approx. 2 inches long, and cook according to package directions, and drain. Add cooked pasta to soup if desired, or place in bowls and ladle soup on top. Enjoy!
