Quick 'n Easy Cajun Sausage, Red Beans and Rice Rate/Review This Recipe |

Ingredients
1 package PERDUE® Lean Turkey Sausage Links, Sweet Italian (alternate: PERDUE® Lean Turkey Sausage Links, Hot Italian) 2 tablespoons canola oil, divided 2 packages (6.6 ounces each) red beans and rice 2 cans (14 1/2 ounces each) Cajun or Mexican seasoned tomatoes 2 tablespoons minced fresh parsley
Instructions
- Preheat oven to 350°. In a large lightly oiled skillet over medium heat, brown sausage on all sides, 8 to 10 minutes. Use remaining oil to grease a 9x13 inch baking pan.
- Prepare beans and rice following package directions and spread in prepared baking pan. Arrange sausage over beans and rice. Top with tomatoes. Cover pan loosely with foil and bake for about 20 minutes.
- If casserole is chilled, add 15 to 20 minutes to baking time. Sprinkle with parsley and serve.
