Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced
Salt and ground pepper to taste
2 tablespoons butter or margarine, divided
3 large shallots, sliced
1/4 cup sliced almonds
1/3 cup chicken broth
1/4 cup orange juice
1 tablespoon brown sugar

 

Instructions
  1. Season chicken with salt and pepper.
  2. In large nonstick skillet, melt 1 tablespoon butter over medium-high heat and brown chicken, 4 minutes, turning once. Remove and set aside.
  3. Melt remaining 1 tablespoon butter and cook shallots, stirring occasionally, 2 minutes. Add almonds and cook, stirring frequently, 1 minute.
  4. Stir in broth, orange juice and brown sugar until blended; bring to a boil.
  5. Return chicken and any collected juices to skillet.
  6. Reduce heat to low; cover and simmer 5 minutes or until chicken is cooked through.
