Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced Salt and ground pepper to taste 2 tablespoons butter or margarine, divided 3 large shallots, sliced 1/4 cup sliced almonds 1/3 cup chicken broth 1/4 cup orange juice 1 tablespoon brown sugar
Instructions
- Season chicken with salt and pepper.
- In large nonstick skillet, melt 1 tablespoon butter over medium-high heat and brown chicken, 4 minutes, turning once. Remove and set aside.
- Melt remaining 1 tablespoon butter and cook shallots, stirring occasionally, 2 minutes. Add almonds and cook, stirring frequently, 1 minute.
- Stir in broth, orange juice and brown sugar until blended; bring to a boil.
- Return chicken and any collected juices to skillet.
- Reduce heat to low; cover and simmer 5 minutes or until chicken is cooked through.
