Ingredients

4 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts, All Natural
3/4 cup Italian bread crumbs
1/4 cup finely grated fat-free Parmasean cheese
Ground pepper, to taste
3 tablespoons Dijon or other mustard
No-stick cooking spray, preferably olive oil

 

Instructions
  1. Preheat oven to 400° F.
  2. In a shallow dish stir, together bread crumbs, Parmesan cheese and pepper. Brush both sides of each chicken breast with mustard. Press the chicken breasts into the crumb mixture, coating both sides completely.
  3. Spray the chicken on both sides with spray.
  4. Set a large, ovenproof sauté pan over medium heat. Add chicken and brown on each side, 1 - 2 minutes.
  5. Transfer to oven and bake 15 - 20 minutes, until meat thermometer inserted in center registers 170° F.

 

Note

This recipe may easily serve 2 people instead of 4 people by using half the quantity of all ingredients.

So ive been making the honey orange glazed chicken and decided to try something new. this recipe was super easy to do and the chicken came out very moist!! definitely will make again!!

Very good. We used italian flavored perfect portions and put shredded mozarella cheese on top for the last few minutes in the oven. Great !
