Ingredients
8 slices leftover cooked chicken
4 Italian sandwich rolls
1/2 cup prepared basil pesto
1/2 cup thinly sliced roasted red peppers
1/2 cup prepared tomato sauce
8 slices part-skim mozzarella cheese
Instructions
- Preheat broiler. Slice rolls and place open-faced on baking sheet. Broil until just golden brown (about 2 minutes).
- Remove rolls from oven and spread each half with 1 tablespoon of pesto. Top each half with a slice of chicken, 1 tablespoon roasted red pepper slices, 1 tablespoon tomato sauce and a slice of mozzarella cheese.
- Return to oven and broil until cheese begins to bubble. Serve immediately.
