Ingredients

1 PERDUE® OVEN STUFFER® Whole Roaster
4 scallions
3 tablespoons butter, softened
1 tablespoon minced fresh sage leaves
1 tablespoon minced fresh thyme leaves
2 tablespoons all-purpose flour
2 cups chicken broth

 

Instructions
  1. Preheat oven to 350°F. Remove giblets from roaster and set aside.
  2. In food processor or blender, process scallions, butter, sage and thyme until mixture forms a paste. Rub mixture inside and outside of roaster, placing any remaining mixture in roast cavity.
  3. Roast 2 to 2 1/4 hours (15 to 20 minutes per pound) until PERFECT ROASTŪ Thermometer pops up and juices run clear, with no hint of pink when thigh is pierced.
  4. Remove roaster to serving platter and keep warm.

Gravy:

  1. Pour pan juices into a heat proof measuring cup. Skim off 3 tablespoons clear yellow drippings from top of juices and return to roasting pan. Discard remaining clear drippings from measuring cup, reserving degreased juices for gravy; add enough chicken broth to make 2 1/2 cups total liquid. Stir flour into roasting pan.
  2. Cook over medium heat 4 to 5 minutes until well browned, stirring and scraping bottom of pan.
  3. Gradually stir in pan juice mixture; simmer 3 to 4 minutes until gravy is thickened, stirring occasionally.

This is so good My Husband and I ate till we almost busted!! The next day I made a pot pie with the left overs. Will make this again and again
