Ingredients

4 PERDUE® Individually Frozen Boneless, Skinless Chicken Thighs
1 teaspoon ground cumin
Salt and ground pepper to taste
2 cloves garlic, minced
1 can Mexican-style recipe-ready tomatoes (14.5 ounces)
2 cans hominy, drained (14.5 ounces each)
2 tablespoons canned diced green chilies
1/4 cup chopped fresh cilantro

 

Instructions
  1. Preheat oven to 350° F.
  2. Lightly grease a 13 x 9 inch baking dish.
  3. Season chicken with cumin, salt and pepper. Place in prepared baking dish and cover with garlic, tomatoes, hominy and chilies.
  4. Cover and bake 30 minutes. Increase oven temperature to 400° F.
  5. Uncover and bake 30 minutes longer, or until chicken is cooked through, basting occasionally with pan juices.
  6. To serve, sprinkle with cilantro.
