Ingredients
4 PERDUE® Individually Frozen Boneless, Skinless Chicken Thighs 1 teaspoon ground cumin Salt and ground pepper to taste 2 cloves garlic, minced 1 can Mexican-style recipe-ready tomatoes (14.5 ounces) 2 cans hominy, drained (14.5 ounces each) 2 tablespoons canned diced green chilies 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 350° F.
- Lightly grease a 13 x 9 inch baking dish.
- Season chicken with cumin, salt and pepper. Place in prepared baking dish and cover with garlic, tomatoes, hominy and chilies.
- Cover and bake 30 minutes. Increase oven temperature to 400° F.
- Uncover and bake 30 minutes longer, or until chicken is cooked through, basting occasionally with pan juices.
- To serve, sprinkle with cilantro.
