Ingredients
1 PERDUE® OVEN STUFFER® Whole Roaster
2 tablespoons McCormick® Grill Mates® Montreal Chicken® Seasoning
1 medium zucchini, scrubbed but unpeeled, diced
2 1/2 cups water
2 packages (5.9 ounces) couscous with pine nuts or couscous with herbed chicken seasoning
Instructions
- Preheat oven to 350 F. Season inside and outside of OVEN STUFFER® Roaster with seasoning.
- Roast 2 hours or until PERFECT ROAST® Thermometer pops up and a meat thermometer inserted in thickest part of thigh registers 180°F.
- Place chicken on serving platter. Remove and discard PERFECT ROAST® Thermometer.
- Pour pan juices into large heatproof measuring cup or bowl. Skim 2 tablespoons of clear drippings from top of juices and return to roasting pan. (Reserve juices for gravy). Place pan over medium heat and add zucchini. Saute 2 minutes.
- Stir in 2 1/2 cups of water and seasoning packets; bring to boil. Stir in couscous. Cover. Let stand 5 minutes. Fluff with fork before serving.
