Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 8 ounces spiral pasta (1/2 a 1-pound package) 1/3 cup extra-virgin olive oil 2 tablespoons red wine vinegar 1 tablespoon Dijon-style mustard 1/2 teaspoon lemon pepper 1/4 teaspoon salt 1/3 cup drained sun-dried tomatoes packed in oil, cut into strips 1/2 cup pitted and halved kalamata olives
Instructions
- Cook pasta according to package directions; drain.
- Meanwhile, preheat grill or broiler. Whisk together olive oil, vinegar, mustard, lemon pepper and salt in a large serving bowl. Pour half of this vinaigrette into a small bowl.
- Grill or broil chicken, turning occasionally and brushing with vinaigrette from the small bowl, 15 to 20 minutes or until a meat thermometer inserted in the center registers 170° F. Do not baste during the last 5 minutes of grilling. Discard any remaining vinaigrette from the small bowl.
- Remove chicken from grill and cut into strips or bite-sized pieces. Add chicken to large serving bowl, along with cooked pasta, sun-dried tomatoes and olives. Toss and serve.
