Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 1 tablespoon olive oil 1 can (14.5 ounces) diced Italian stewed tomatoes* Salt and pepper to taste 1/2 cup shredded Italian cheese blend or mozzarella 1/3 cup rinsed and sliced black olives
Instructions
- In large, nonstick skillet over medium heat, heat oil. Cook chicken 3 to 4 minutes per side, until browned.
- Add tomatoes, basil, oregano, salt and pepper; reduce heat to medium-low. Cover and simmer 10 to 15 minutes, or until meat thermometer inserted in center of chicken registers 170°F.
- To serve, top with cheese and sliced olives.
* If desired, replace Italian stewed tomatoes with 2 cups chopped fresh tomatoes, 1 tablespoon dried basil and 1 teaspoon dried oregano.
