Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced Salt and pepper to taste 1 cup spinach leaves 1 cup julienne cut carrots 1 cup canned peas 4 cups water 3 tablespoons margarine or butter Plastic food wrap
Instructions
- Season chicken breasts with salt and pepper.
- Lay thin-sliced chicken breast out and add spinach, carrot and peas to each in the center. With the plastic food wrap, roll up each chicken breast 3 or 4 times. Make sure the chicken is rolled up securely within the plastic wrap.
- In a saucepan, pour addenough water, bring to a boil, turn add chicken rolls in plastic wrap and cook for 20 minutes.
- Remove from water wait a couple of minutes before carefully removing the plastic wrap from chicken.
- Heat butter in a saucepan and brown the rolls on both all sides.
- Cut into 1-inch slices and serve. If you wish you can garnish the plate with crispy lettuce.
