Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced 1 tablespoon olive oil Salt and ground black pepper to taste 2 cups sliced bell peppers 1 cup sliced onion 2 cups hot, cooked couscous or brown rice 1 tablespoon minced fresh parsley (optional)
Instructions
- Prepare outdoor grill for cooking or preheat broiler.
- Rub cutlets with oil and lightly season with salt and pepper.
- Grill cutlets 5 - 6 inches from heat source 3 minutes. Turn cutlets over and cover with peppers and onions. Grill 5 - 6 minutes longer until cutlets are cooked through.
- Serve with couscous tossed with parsley.
