Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breast Tenderloins (cut into strips) 1 package (1 pound) ziti 1 egg 2 tablespoons tomato paste 1 1/4 cup milk 1/4 cup unsalted butter or margarine, divided 2 large onions, thinly sliced 2 cloves garlic 2 tablespoons all-purpose flour 1/2 teaspoon oregano 3/4 cup grated white cheese*, divided (alternate: grated mozzarella or Parmesan cheese) Salt and pepper, to taste 3 tablespoons capers
Instructions
- Cook ziti according to package directions. Drain. Place in large bowl; cover and reserve.
- Meanwhile, beat egg, tomato paste and milk together in a small bowl; reserve.
- Melt 2 tablespoons butter in a large pot over medium heat. Cook chicken strips, turning occasionally, until brown on all sides, 4 to 5 minutes. Remove chicken from pot and mix with ziti in bowl; cover and reserve.
- Add remaining 2 tablespoons butter, onions and garlic in the pot. Cook until brown, about 2 to 3 minutes. Sprinkle flour over onions, stirring constantly, until lightly brown, 1 to 2 minutes. Add egg mixture, stirring constantly, until well blended. Stir in oregano, 1/2 cup of the grated white cheese and salt and pepper to taste.
- Reduce heat and simmer until mixture starts to thicken, about 3 to 5 minutes. Stir in reserved chicken, macaroni and capers. Cook until heated through, stirring occasionally, about 2 to 3 minutes.
- Serve with remaining 1/4 cup grated white cheese sprinkled on top.
Note
