Ingredients

8 PERDUE® TENDER & TASTY™ Individually Frozen Chicken Tenderloins
3 tablespoons canola oil
1 egg
1 cup buttermilk
1/2 cup self-rising flour
1 cup cornmeal
1 teaspoon Creole or Cajun seasoning

 

Instructions
  1. Preheat oven to 400° F.
  2. Pour oil into a 13 x 9 inch baking dish and place in oven.
  3. In a shallow bowl, beat egg. Whisk in buttermilk.
  4. Place flour on one plate and cornmeal and seasoning on another. Dip chicken in flour, egg mixture and cornmeal.
  5. Arrange in hot oil in baking dish; oven-fry, uncovered, 10 minutes. Turn and cook 8 to 10 minutes longer, or until golden brown and cooked through.
