Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced 1 tablespoon olive oil 4 ounces pepperoni, sliced into 1/4-inch thick round and cut in half 1/2 lemon 1 cup mushrooms, quartered 1/4 cup white wine* 1/2 cup chicken broth 1/2 teaspoon lemon pepper seasoning 1/4 teaspoon salt 3 tablespoons minced fresh parsley (optional)
Instructions
- Heat oil over medium-high heat in a large skillet. Add chicken and pepperoni and cook until chicken is browned, about 5 minutes each side.
- Meanwhile, peel lemon half, pull apart segments, and dice segments into 1/4-inch pieces.
- Add mushrooms to skillet and continue cooking 5 minutes. Add diced lemon, wine, chicken broth, lemon pepper seasoning and salt. Lower heat to medium and cook 5 minutes.
- Sprinkle with parsley and serve with rice or buttered egg noodles.
* May substitute 1/4 cup chicken broth or water.
