Ingredients

1 PERDUE® OVEN STUFFER® Whole Roaster
2 ripe lemons
1 bunch fresh basil
1 quart chicken broth
Kosher salt and pepper to taste
6 to 7 quart Crock-Pot® slow cooker

 

Instructions
  1. Remove giblets and place roaster breast side down in slowcooker.
  2. With a fork, pierce 1 lemon on all sides.  Place lemon and 1 large sprig of basil inside cavity of chicken. 
  3. Slice remaining lemon and add basil, broth, salt, and pepper to slow cooker and cook for 8 – 9 hours on low or 4 – 5 hours on high. 
  4. Pair chicken with pasta and sundried tomatoes or use deboned, chilled chicken for a Cobb salad or Nicoise salad for a light and satisfying dinner all year round.
