Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Turkey Breasts, Thin-Sliced (alternate: PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced) 1/4 cup mayonnaise 1 large clove garlic, finely chopped 2 tablespoons chopped fresh basil 4 large portabella mushrooms (about 5 ounces each), stems removed 2 tablespoons PLUS 1 teaspoon olive oil (divided) (alternate: vegetable oil) 1 tablespoon balsamic vinegar Salt and ground pepper to taste 4 large Italian sandwich rolls, split 2 tablespoons grated Parmesan cheese
Instructions
- Preheat grill. In small bowl, combine mayonnaise, garlic and basil; refrigerate until ready to serve.
- Brush outside of mushroom caps with 1 teaspoon oil. Grill, brushed-side-up, 5 minutes. Turn mushroom caps over and brush inside with vinegar. Grill 7 minutes or until tender.
- Meanwhile, season cutlets with salt and pepper. Grill cutlets, turning occasionally, 4 minutes or until cooked through; remove and keep warm.
- Brush cut-side of rolls with remaining 2 tablespoons oil then sprinkle with Parmesan cheese. Grill rolls, cut-side-down, until toasted.
- To serve, evenly divide cutlets between Parmesan toasted rolls. Spread basil garlic mayonnaise over cutlets then top each sandwich with mushroom cap and top of roll.
