Italian Grilled Chicken with Venetian Vegetable Kebabs Rate/Review This Recipe |

Ingredients
2 packages PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 1 jar sun-dried tomatoes packed in extra-virgin olive oil (7 ounces) 2 small zucchini, thickly sliced 1 large sweet onion such as Vidalia or Maui, peeled and quartered 2 teaspoons dried Italian seasoning Salt and ground pepper, to taste
Instructions
- Combine sundried tomatoes, their oil, zucchini, onion wedges and Italian seasoning in a large bowl. Season to taste with salt and pepper.
- Cut chicken into bite-sized pieces and toss with vegetable mixture. Marinate refrigerated for 30 minutes to 12 hours.
- Prepare grill or broiler.
- Thread chicken and vegetables onto skewers.
- Grill kebabs over medium-hot heat for 10 to 15 minutes, turning occasionally, until chicken is cooked through.
- Serve.
