Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced Salt and ground pepper to taste 2 tablespoons olive oil 1 tablespoon dried Italian herb seasoning 1 clove garlic, minced 1 small loaf Italian bread, cut in 3/4 inch-thick slices 4 ripe Italian plum tomatoes, sliced 1/2 cup shredded part-skim mozzarella cheese 6 fresh basil sprigs (alternate: marjoram sprigs (optional))
Instructions
- Preheat broiler. Sprinkle cutlets with salt and pepper, place on broiling pan. Broil 3 to 5 inches from heat source 1 1/2 to 2 minutes on each side, until cooked through.
- Meanwhile, in small bowl, combine oil, Italian seasoning and garlic. Brush on bread and place in broiling pan with cutlets; toast lightly on both sides.
- To serve, arrange cutlets on toasted bread. Top with sliced tomatoes and sprinkle with cheese. Place under broiler just until cheese melts. Garnish with herb sprigs, and serve immediately.
