Italian Chicken Strata     Rate/Review This Recipe

Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
8 slices turkey bacon
12 ounces ciabatta or focaccia bread, sliced into 1/2 -inch thick pieces
2 large tomatoes, cored and sliced
2 cups egg substitute
1 1/2 cups light cream
1 teaspoon salt
Pepper, to taste
2 cups 2% grated cheddar (divided)

 

Instructions
  1. Preheat oven to 350° F.
  2. In a large skillet, cook bacon over medium heat. Drain on paper towels. Keeping a little bacon fat in pan, add chicken and cook until cooked through. Set aside.
  3. Cover the bottom of a 9 x 13 inch baking dish with ciabotta or fococcia slices. Cover bread with tomato slices and then bacon. Cut chicken into thin slices and lay over bacon. Sprinkle 1 cup cheese over chicken. Top with more focaccia.
  4. In large bowl, whisk together eggs, cream, salt and pepper. Slowly pour mixture over strata.
  5. Bake 30 minutes, remove from oven and top with remaining cheese and bake an additional 10-15 minutes until cheese has melted and strata feels firm to the touch. Cut into 8 squares and serve hot.
