Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 8 slices turkey bacon 12 ounces ciabatta or focaccia bread, sliced into 1/2 -inch thick pieces 2 large tomatoes, cored and sliced 2 cups egg substitute 1 1/2 cups light cream 1 teaspoon salt Pepper, to taste 2 cups 2% grated cheddar (divided)
Instructions
- Preheat oven to 350° F.
- In a large skillet, cook bacon over medium heat. Drain on paper towels. Keeping a little bacon fat in pan, add chicken and cook until cooked through. Set aside.
- Cover the bottom of a 9 x 13 inch baking dish with ciabotta or fococcia slices. Cover bread with tomato slices and then bacon. Cut chicken into thin slices and lay over bacon. Sprinkle 1 cup cheese over chicken. Top with more focaccia.
- In large bowl, whisk together eggs, cream, salt and pepper. Slowly pour mixture over strata.
- Bake 30 minutes, remove from oven and top with remaining cheese and bake an additional 10-15 minutes until cheese has melted and strata feels firm to the touch. Cut into 8 squares and serve hot.
