Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Thigh Filets 2 tablespoons vegetable oil 1 1/2 tablespoons finely chopped crystallized ginger 1 tablespoon reduced-sodium soy sauce 1 tablespoon honey 2 tablespoons Dijon-style mustard 1 large green bell pepper, cut into 2-inch pieces 1 onion, cut into chunks 1 sweet potato, parboiled 8 to 10 minutes, peeled and cut into chunks 1 cup fresh pineapple chunks (alternate: canned pineapple chunks)
Instructions
- Cut thighs into bite-sized pieces; set aside.
- In a mixing bowl, combine oil, ginger, soy sauce, honey and mustard. Add chicken, pepper, onion, parboiled sweet potato and pineapple; marinate for 30 minutes to 12 hours.
- Prepare grill.
- Thread alternating pieces of chicken, vegetables and fruit onto 10 to 12-inch metal skewers.
- Grill 10 to 12 minutes, turning frequently until chicken is cooked through and vegetables are tender.
