Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Thigh Filets 1 tablespoon olive oil (alternate: vegetable oil) 1 large red onion, sliced 1/2 teaspoon chili powder, to taste 1 can mandarin oranges, drained and juice reserved (11 ounces) 1/4 cup coconut, toasted
Instructions
- In large nonstick skillet, heat oil over medium-high heat.
- Sauté chicken cut into bite size pcs, and onion, stirring occasionally, until chicken is browned. Add chili powder. Continue sautéing until chicken is cooked throughout and onions are soft and caramelizing.
- Add oranges and 2 tablespoons reserved juice; heat through.
- To serve, sprinkle with toasted coconut.
