Herb and Ricotta Stuffed Chicken Breasts with Green Mayonnaise Rate/Review This Recipe |

Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced (alternate: Turkey Breast Cutlets) 1 cup ricotta cheese 1/2 cup mixed fresh herbs such as parsley, oregano, rosemary, thyme and chives, chopped 2/3 cup corn bread stuffing 1/4 cup grated Parmesan cheese Salt and pepper, to taste 1 cup chicken broth 3/4 cup mayonnaise
Instructions
- Preheat oven to 450°F. Lay chicken slices on a clean surface.
- In a medium bowl, blend together ricotta, 1/4 cup herbs, stuffing, Parmesan cheese, salt and pepper. Divide stuffing among chicken slices. Roll chicken around stuffing and set rolls in a baking pan, spacing them about 1 inch apart.
- Pour broth around chicken rolls and bake 25 minutes, until cooked through. Transfer chicken to a cool dish and refrigerate until cold (approximately 2 hours).
- Put remaining 1/4 cup herbs into a blender or food processor with mayonnaise and process until smooth.
- Slice cold chicken into 1/4 -inch thick rounds. Arrange on a platter and serve with green mayonnaise.
