Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 1/4 cup olive or vegetable oil 2 cloves garlic, finely chopped 1 teaspoon ground cumin Salt and ground pepper to taste 2 medium onions, halved and sliced 2 red and/or green bell peppers, cut into thin strips 3/4 cup sour cream 1/4 cup chopped fresh cilantro 1 tablespoon lime juice 4 flour tortillas, warmed, if desired.(10 inch)
Instructions
- Preheat grill or broiler.
- In small bowl, combine oil, garlic, cumin, salt and ground pepper until blended. In medium bowl, toss together onions, bell peppers and 1 tablespoon seasoning mixture.
- Grill or broil chicken, turning occasionally and basting with remaining seasoning mixture, 15 minutes or until meat thermometer inserted in center registers 170°F.
- Grill vegetables in grill wok or on grill screen, stirring occasionally, until tender.
- Meanwhile, in small bowl, combine sour cream, cilantro and lime juice until well blended; refrigerate until ready to serve.
- To serve, cut chicken into strips and arrange in tortillas with vegetables. Top with sour cream and roll to enclose.
