Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced 1 small eggplant 1/2 cup prepared Italian vinaigrette 16 cherry tomatoes 4 teaspoons pesto 1/2 cup grated fontina cheese 1/4 cup grated Parmesan cheese
Instructions
- Preheat grill to medium-high heat. Trim eggplant and slice 4 slices about ½ inch thick; reserve remaining eggplant for another purpose.
- Place chicken and eggplant slices in a baking pan. Drizzle with vinaigrette, toss gently.
- Divide tomatoes among 4 skewers. Arrange chicken and eggplant on grill and cook about 2 minutes per side; move often so it doesn’t stick.
- Set some chicken atop each piece of eggplant. Place tomato skewers on the grill. Sprinkle each chicken stack with cheeses, dividing equally. Close lid and let cheese melt. Remove stacks and skewers, then serve.
