Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts 8 ounces linguini 1 medium yellow onion, sliced 1 medium zucchini, halved lengthwise and cut into 1/2-inch pieces 1 package (12-ounce) mushrooms, quartered 1 tablespoon olive oil 1 tablespoon minced fresh basil (or 1 teaspoon dried) 1 teaspoon minced fresh oregano (or 1/2 teaspoon dried) 1 jar (16-ounce) Alfredo sauce, heated 1/2 cup grated Parmesan cheese (optional)
Instructions
- Prepare grill or broiler. Cook linguini in salted water according to package directions, until tender but firm. Drain.
- Meanwhile, combine onion, zucchini, mushrooms, oil, basil and oregano in a large bowl.
- Grill or broil vegetables on a grill screen or in a broiling pan, stirring occasionally, until tender. Grill or broil chicken at the same time, turning occasionally, 15 minutes or until meat thermometer inserted in center registers 170°F. Cut chicken into strips.
- Combine warm pasta, sliced chicken, vegetables and Alfredo sauce in a large bowl and toss until evenly coated. Serve with Parmesan if desired.
