Ingredients
1 PERDUE® OVEN STUFFER® Whole Roaster 2 tablespoons melted butter Paprika, preferably sweet Hungarian 1 tablespoon salt and freshly ground pepper to taste 1 large onion, peeled and sliced 1 bunch fresh dill, divided (optional) 1 container (8 ounces) sour cream
Instructions
- Preheat oven to 350° F. Remove giblets from chicken.
- In small bowl combine butter, paprika, salt and pepper. Rub seasoned butter over skin and inside cavity of roaster. Place half of onion and half of dill in cavity.
- Place roaster in a shallow roasting pan and scatter remaining onion slices around it. Roast 2 to 2 1/2 hours, until PERFECT ROAST® Thermometer pops up, and meat thermometer inserted into thickest part of the thigh registers 180° F.
- Transfer roaster to serving platter and keep warm. Remove and discard PERFECT ROAST® Thermometer.
- Tip pan, skim off and discard clear liquid from top of pan juices. Off heat, whisk sour cream into juices.
- Garnish with fresh dill sprigs. Slice roaster; serve with pan sauce.
