Ingredients
1 package PERDUE® SHORT CUTS® Carved Chicken Breast, Southwestern Style, 6 oz. 2 tablespoons olive oil 1 medium onion, cut into rings 1 medium red bell pepper, cut into strips 3/4 cup apricot-peach sauce (alternate: apricot or peach preserves)
Preparation Steps
- In 12-inch skillet, heat oil over medium-high heat and cook onion and red pepper, stirring occasionally, 6 minutes or until crisp-tender and starting to brown.
- Reduce heat to medium. Stir in chicken and apricot-peach sauce; cover and cook until heated through, about 3 minutes.
- Serve, if desired, rolled in flour tortillas or over hot cooked rice.
