Ginger-Scented Cutlets with Vegetables     Rate/Review This Recipe

Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Turkey Breasts, Thin-Sliced (alternate: PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced)
4 12-inch x 18-inch pieces heavy-duty aluminum foil
Salt and ground pepper to taste
4 cups thinly sliced or matchstick cut vegetables such as mushrooms, onions, peppers, zucchini and/or yellow squash
2 tablespoons finely chopped fresh ginger
2 tablespoons olive oil
4 tablespoons white wine

 

Instructions
  1. Preheat grill. Evenly divide and arrange cutlets in center of each piece of foil then season with salt and pepper.
  2. In large bowl, combine vegetables, ginger and oil and toss until evenly coated.
  3. Evenly spoon vegetables over cutlets then sprinkle each packet with 1 tablespoon wine.
  4. Bring up 2 sides of each piece of foil and double fold with 1-inch wide folds. Double fold each end to form pouches.
  5. Grill 10 minutes or until cutlets are cooked through and vegetables are tender.
