Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts Salt and cracked black pepper to taste 2 tablespoons butter 1 lemon, thinly sliced 1 can sliced cling peaches in heavy syrup (15.25 ounces) 2 tablespoons chopped crystallized ginger
Instructions
- Season chicken with salt and pepper.
- In large, nonstick skillet over medium heat, heat butter.
- Add breasts and sauté 6 to 8 minutes per side or until golden brown. Top with lemon slices. Add peaches (with their liquid) and ginger.
- Cover and simmer over medium heat 10 minutes or until chicken is glazed with juices and cooked through, basting frequently with juices during cooking.
Tip
Look for crystallized ginger with spices in the baking department, and use it on both sweet desserts and savory dishes like this one. If unavailable, substitute 1 1/2 teaspoons ground ginger.
