Ginger Brew Glazed Roaster     Rate/Review This Recipe

Ingredients

1 PERDUE® OVEN STUFFER® Whole Roaster
1 bottle non-alcoholic ginger beer* (12-ounce)
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 lemon, sliced

 

Instructions
  1. Empty ginger beer into a small saucepan and bring to a boil; continue boiling for 10-15 minutes or until ginger brew reduces in volume by at least half.
  2. Meanwhile, preheat oven to 350° F. Remove giblets from roaster, and place it breast up in a roasting pan.
  3. Whisk vegetable oil and salt and pepper into reduced ginger brew. Brush half of mixture over roaster. Stuff lemon slices into cavity. Cover roaster with aluminum foil and roast 45 minutes.
  4. Remove foil. Brush remaining half of ginger beer mixture over roaster. Continue roasting, uncovered, basting with sticky pan juices every 20 minutes.
  5. Remove when PERFECT ROAST® Thermometer pops up and a meat thermometer inserted into the thickest part of the thigh registers 180° F, about 1 1/4 hours. Remove PERFECT ROAST® Thermometer.
  6. Remove roaster from pan and let stand 10-15 minutes. Carve bird**, transfer to serving platter, and ladle with more sticky pan juices. Serve.

*Ginger brew, sometimes called ginger beer, has a more pronounced ginger flavor than ginger ale, and is available by the bottle in the premium soft drink section of most supermarkets. The label often says it is “Jamaican style.”

**Save carcass to make stock for planover meals if desired.
