Ingredients
1 package PERDUE® Fresh Ground Chicken (alternate: PERDUE® Fresh Lean Ground Turkey) 1 package (8 ounces) cornbread stuffing 3 teaspoons chili powder, divided 4 teaspoons vegetable oil, divided 1 cup chopped onion 1 can (11 ounces) Cheddar cheese soup 1/3 cup low-fat milk 1 large egg, lightly beaten 1/2 cup shredded Monterey Jack cheese, for garnish (optional) 1 tablespoon minced fresh parsley, for garnish (optional) Fresh or prepared salsa, for garnish (optional)
Instructions
- Prepare stuffing according to package directions. Stir in 1 teaspoon chili powder.
- Lightly oil an 8 to 9-inch square baking dish. Press warm stuffing evenly into dish to form a crust. Flute the top edge decoratively and set aside.
- Preheat oven to 400°F. In a large non-stick skillet over medium-high heat, heat remaining oil.
- Add ground chicken or turkey, onion and remaining 2 teaspoons chili powder and sauté 6 to 8 minutes, until meat is no longer pink.
- Meanwhile in a large mixing bowl, combine soup, milk and egg.
- Add sautéed chicken or turkey and stir until well combined. Pour mixture into stuffing crust and bake on the middle shelf of oven for 30 minutes, until the center of pie is set and slightly puffed.
- Sprinkle, if desired, with shredded cheese and parsley. Allow pie to sit for 10 to 15 minutes before slicing. Serve, if desired, with salsa.
