Ingredients
1 package PERDUE® SHORT CUTS® Carved Chicken Breast, Original Roasted, 9 oz. (cut into small pieces) Non-stick cooking spray 1 cup finely shredded cabbage or coleslaw mix 1/2 cup fresh bean sprouts 1/2 cup shredded carrots 1/4 cup finely chopped green onions 1/2 cup sauce such as peanut, sweet & sour, duck, oyster or Hoisin 12 egg roll wrappers Dipping sauces such as peanut sauce, duck sauce, sweet and sour sauce, or Chinese mustard sauce (optional)
Preparation Steps
- Preheat oven to 400°F. Spray a cookie sheet with non-stick cooking spray. In a mixing bowl, combine PERDUE® SHORT CUTS® with cabbage, bean sprouts, carrots, green onions and sauce.
- Working with one egg roll at a time, turn egg roll wrapper so it looks like a diamond. Place about 2 tablespoons chicken mixture just below the egg roll center. Fold the lower point of the diamond over the filling tucking it under the filling. Fold the left and right corners over that. Tightly roll the egg roll. Moisten the top corner with a bit of water to prevent it from unrolling. (Note: Keep the egg roll wrappers in their package or cover with a moist towel so they don't dry out.)
- Place egg rolls seam side down on the pan. They can be close together but not touching. Lightly spray the egg rolls with the non-stick cooking spray. Bake 15-20 minutes until golden brown. Serve with your preferred dipping sauces, if desired.
