Ingredients
1 PERDUE® OVEN STUFFER® Whole Roaster 3 tablespoons olive oil 4 cloves garlic, peeled and crushed 1 teaspoon dried oregano leaves Salt and freshly ground pepper to taste 1 lemon, halved
Instructions
- Preheat oven to 350° F. Remove giblets from chicken.
- In a small bowl, combine oil, garlic, oregano, salt and pepper. Squeeze 1/2 lemon into oil mixture. Dip cut side of squeezed lemon into oil mixture and rub generously over outside of roaster, using the lemon like a brush. Place remaining oil mixture, with crushed garlic cloves and both lemon halves in body cavity.
- Place roaster in shallow, flameproof roasting pan. Roast 2 to 2 1/2 hours, until PERFECT ROAST® Thermometer pops up, and a meat thermometer inserted in thickest part of thigh registers 180°F. Transfer roaster to serving platter.
- Remove and discard PERFECT ROAST® Thermometer. Tip pan; skim off and discard clear liquid from top of pan juices. Slice roaster and serve with pan juices.
