Crispy Roaster with Orange & Thyme     Rate/Review This Recipe

Ingredients

1 PERDUE® OVEN STUFFER® Whole Roaster
2 tablespoons olive oil
1 tablespoon fresh thyme leaves, plus 8-10 thyme sprigs
1/2 teaspoon each salt and pepper
1 large navel orange

 

Instructions
  1. Preheat oven to 350° F. Remove giblets from roaster and place it breast side up in a 9x13-inch roasting pan. Brush with olive oil, and sprinkle 1 tablespoon thyme leaves, salt and pepper all over skin.
  2. Cut orange into thin slices, discarding ends; stuff slices into cavity along with thyme sprigs.
  3. Roast chicken 2 - 2 1/4 hours, or until PERFECT ROAST® Thermometer pops up and meat thermometer inserted into thickest part of thigh registers 180° F. Remove PERFECT ROAST® thermometer, carve and serve.

this sound like a different way to do chichen, i like perdue chicken i can tell the difference'

This really is one of the best recipes that new cooks should use, it is really great and you won't be sorry!! There are better recipes/processes, but no one will argue with the fact that this produces a well prepared roaster chicken that you can be proud of!!

I can't believe the guy from Jersey planned the time of his party based on the exact second the bird should be done! That's funny. You should always give it extra time just in case. If you want a more intense flavor you can put fruit under the skin of the bird as well. (works great with apples... mmmm...) Or add some juice on the bird to baste it.

Great flavor with just enough hint of A 'La Orange. The thyme is a great flavor as well and does not intrude the wonderful chicken flavor. This is a winner!

Overall good but nothing special. The orange flavor was a lot more subtle than i had expected.
