Ingredients
6 PERDUE® Fresh Chicken Drumsticks
3/4 cup buttermilk
1/4 cup finely chopped onion
1/2 cup yellow cornmeal
1/2 cup fresh bread crumbs, lightly toasted
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh thyme
Dash ground red pepper
Salt and ground black pepper to taste
2 tablespoons vegetable oil
Instructions
- In medium-sized bowl, combine buttermilk and onion. Add chicken; cover and marinate in the refrigerator 2 to 3 hours.
- Preheat oven to 425°F. On plate, combine cornmeal, bread crumbs, Parmesan cheese, thyme, red pepper, salt and black pepper. Dredge chicken in crumbs, coating all sides.
- Place chicken on baking sheet; drizzle with oil. Bake 20 to 30 minutes until chicken is crisp and cooked through.
